Potatoes are one of the most-loved vegetables, largely because of how versatile and delicious they are. It’s also easy to prepare, and contains nutrients, even though it’s got a bad rap in the last few years.

It’s not really the vegetable that’s to blame, it is the way we consume it! Don’t we all love to eat those crispy french fries? We are all guilty! But guess what, potatoes are actually extremely nutritious, and should be included in a balanced diet to boost overall health. Provided we eat it in the right form! 

Potatoes are rich in fibre and ensure that your gut health stays in check, and so does your digestive system!  The potassium content found in potatoes is beneficial for heart health, and reduces the instances of water retention. What’s more, the presence of vitamins C and B boosts overall health, especially your immune system. 

The tryptophan content in potatoes is known to help induce sleep, which ensures you’re well-rested!

So, what’s the healthiest way to include potatoes in your diet? Soup it up! Potato soup is extremely nutritious, delicious and can prove to be soothing after a particularly bad day, or on a cold winter evening. It can also be very comforting, when you’re suffering from the flu.

So, here’s a simple recipe for potato soup that is healthy and easy to make.

Here are the ingredients you will need:

4 potatoes, peeled and chopped
3 cloves garlic, crushed
1 onion, chopped
½ cup milk
1 to 2 cups water or vegetable stock
4 tbsp butter
1 tsp black pepper
Salt to taste

Here’s how to prepare the potato soup:

Step 1: Start by placing a saucepan over low heat. Add 2 tbsp of butter to the saucepan. When it melts, add the garlic.

Step 2: Once the garlic is done, add the onions.

Step 3: Now, add the potato pieces to this mix. Increase the heat. Add 2 more tbsp of butter, black pepper and salt. Keep sauteing until done.

Step 4: Lower the flame, and add milk to the mix. Cover the saucepan with a lid and let it cook for 8 to 10 minutes.

Step 5: The next step is adding the water or vegetable stock. The benefit of adding vegetable stock is that you will be able to include the goodness of other vegetables such as carrots, spring onions and cauliflower.  In addition, you can always fix the proportion of water and milk to get the consistency and creaminess, as per your taste.

Step 6: Keep cooking on low heat for 10 -15 minutes. You can increase or decrease the time, depending on how long the potatoes take to become soft and well-cooked.

Step 7: This step is optional but if you want a smooth soup with no pieces to chew on, you can puree the mixture in a blender. You can garnish it with some oregano!
