This moringa paratha recipe by chef Kunal Kapur strikes the perfect balance between taste and health

Kunal Kapur, celebrity chef, is widely followed on Instagram for the delicious recipes he shares! Recently, he shared a rather unique paratha recipe that strikes the perfect balance between health and taste.

Now, paratha is a beloved breakfast option but this variation by the star chef might just become your favourite! This time around, the expert recommends adding moringa to your parathas for a healthy start to the day.

We spoke with Deepti Khatuja, Clinical Nutritionist, Fortis Memorial Research Institute, Gurugram to understand the nutritional benefits of moringa. According to her, “Moringa, which is often called drumstick plant, is often called a lesser-known superfood. It is mostly used for south Indian dishes like sambar. But recently, with the surge in Covid-19, people are increasingly realizing the important role it plays in keeping our immune system strong.”

Explaining the benefits of moringa, Deepti said, “It is extremely fibrous which means it can help control cholesterol and blood sugar levels. In addition, it is also rich in vitamins A and B. The beta carotene present in moringa can boost immunity. Moreover, the presence of minerals such as calcium and potassium can also benefit overall health.”

In his post, chef Kunal also mentions that the “Moringa plant is overflowing with vitamins A, B, C, D, E and minerals including potassium, calcium, iron, selenium, and magnesium. Moringa leaves are rich in essential amino acids which are not commonly found in plants, and it is extremely rich in proteins. Moringa leaves can be dried at low temperature and made into powder using a mortar and pestle.”

PERSONALISE NOW

Moringa Leaves (chopped) – 1 cup
-Whole wheat flour (Atta) – 2cups
-Gram Flour (Besan) – ¼ cup
-Green chilli chopped – 1 tsp
-Onion chopped – 3 tbsp
-Ginger chopped – 1 tsp
-Coriander seeds (pounded) – 2 tbsp
-Cumin seeds – 2 tsp
-Salt – to taste
-Turmeric – ½ tsp
-Water – as required
-Oil – a dash
-Ghee – as required

If you notice, all the ingredients are easily found at home and are also healthy.

No paratha is complete without chutney! So, we say you also look at chef Kunal’s garlic chutney ingredient list and try to replicate it at home

-Oil – 4 tbsp
-Heeng – ½ tsp
-Cumin – 2tsp
-Curry leaves – a sprig
-Garlic cloves – 15nos
-Kashmiri Dry Red Chilli (soaked) – 12nos
-Water – ¾ cup
-Jaggery (Gur, small chunks) – ¼ cup
-Lemon – 1no
-Salt – to taste
