Also called ‘rajgira’ and ‘ramdana’, amaranth has recently gained popularity, even though it is considered to be an ancient grain. Actually, many refer to it as a ‘pseudo grain’, because it isn’t exactly a cereal, but can be used as one.

So, what are the benefits of using amaranth flour as an alternative?

Amaranth is considered to be a powerhouse of nutrients and vitamins. It is particularly rich in protein, which isn’t just great for your muscles but also keeps you satiated for a longer period of time, and helps with avoiding overeating. What’s more, the high amount of fibre ensures that your digestion stays on track. 

The iron and selenium content ensures your body functions smoothly. Antioxidants present in it help fight the action of free radicals that cause damage to our cells. What’s more, a study published on PubMed Central noted that amaranth may also help lower levels of bad cholesterol!

So, there are plenty of reasons, as to why you need this flour in your life! Turns out, you can also replace wheat flour and all-purpose flour with amaranth for your bakes. When we’re eating healthy, it is a given that something like cookies must be avoided due to the abundance of butter and all-purpose flour/wheat flour. However, you don’t need to abstain from cookies altogether, because we bring to you a recipe that is free of gluten and butter, but scores high on taste.

Cinnamon and almond amaranth cookies are easy to make, low in calories, so you can enjoy them without any guilt!

Here’s what you need:

-1 cup amaranth flour, 

-½ cup brown sugar 

-, ½ cup olive oil

-, 1 tsp cinnamon powder

– ¼ cup almonds, crushed,

– ½ teaspoon baking soda,

– ¼ teaspoon salt

 -1 egg

Here’s how to make amaranth cookies:

Step 1: Whisk the egg in a bowl. To the bowl, add the olive oil and continue whisking the two ingredients together.

Step 2: Once done, add brown sugar to this mix.

Step 3: Next, add the cinnamon and almonds to the egg, olive oil and brown sugar mix.

Step 4: Now, very slowly add the amaranth flour to the bowl. In fact, you should add only a small portion first, whisk it till it is mixed well with the other ingredients and then add some more. Do it till the whole cup of amaranth flour has been mixed with the contents in the bowl.

Step 5: Add baking soda and salt to the bowl, as the final step of the mixing process.

Step 6: Pre-heat the oven at 180°C. In the meantime, use a tablespoon to shift the dough to the parchment paper. One tablespoon of the cookie dough, at a time, should be able to give you good results!

Step 7: Place the cookies in the oven and bake for about 10 minutes. Your gluten-free amaranth cookies are done!
